Cooking tips

I couldn’t connect to this blog’s server for a while. Don’t know what happen.
But I found that there are some new blog about Thai politic and coup which is not Ok for the goverment. Maybe this is a cause of that problem.
Actually this articles already in our cookbook.
But I just want to share with those who don’t have our cookbook.

ROASTED PEANUTS
Roast peanuts (with thin brown shell still covering) in a wok or pan without oil over low heat until the shell is comes off.
Place in a tray, and cool. Rub the peanut by hands to remove the shell. Keep in a jar with tight lid on.

FRIED CASHEW NUTS
Put cooking oil cover cashew nuts in a wok and bring  it to fry over low heat. Keep stirring until turns nearly golden brown.
Immediately remove from oil and drain in a seive for a while. Then wipe the oil off by kitchen towel until dries. Keep in a jar with tight lid on.
WARNING!!   No Rush!   Don’t turn the heat higher to get faster boiling. It’s burn easily in a second.

CHILI POWDER
    Drying chili in strong sun light or roast in a wok without oil over very low heat. Keep stitting until chili becomes fragrant (almost make you sneeze).
Place in a tray, and cool. Don’t rub by hand like peanuts!. Just grind or pound into powder. Keep in a jar with tight lid on.
