How to choose a good wok ?
The good wok in my opinion should be easy to keep & clean. It is the thin coated iron wok. It’s semi-circle shape which black and heavy. It’s weight about 900 g.for 34 cm. diameter. This size is good for 1-4 portions.
To clean > Use soap and sponge to clean (dish washer is O.K.). If it’s burnt, just soak in water for a while before clean (don’t try to scratch, It’ll be damage)
To keep > Keep it normal as dishes. No need to coat by oil because it’s easy to get dirty by dust.

How do u prepare a wok when it is new ?

Put oil in a wok about 1 tablespoon and put over low heat.
Heat up oil until wok smoking. Then move oil along the wok.
Let it’s go for 2-3 minutes. Turn heat off and cool it down.
Do again about 2-3 times. If you have closed cabinet, you can coat by oil before keep. We don’t do like that because Thailand has lots of dust.
